Arroz con Leche

A simple, nutritious treat. Serves 4-8

1 cup rice

1 cinnamon stick

¼ grated lemon peel (optional)

pinck of salt

8 cups whole milk

1-2 cups sugar

Wash the rice (if needed) and cook with the salt, cinnamon stick and lemon peel in minimal water until it is nearly done. Set the flame to low and add the milk while stirring. Continue to cook uncovered over low heat, stirring occasionally, until the milk is mostly absorbed and the mixture has the desired creamy consistency. Add the sugar, stir and cook a few more minutes to dissolve.

Pour into serving dish and sprinkle with cinnamon. Chill.

Thanks to all the parents who have already provided snacks for the Spanish Program... as you know, our children are ready for a snack after school! Snacks not only provide an opportunity to learn food related vocabulary, but also to expand our appreciation for the foods of Spanish speaking cultures. I've added a new recipe on this blog for "Arroz con Leche"- thank you to Aria Arrizabalaga for letting us share her recipe! The students were lucky enough to enjoy this snack a few weeks ago, wouldn't it be fun to prepare it at home too!
